Biangbiang Noodles
Biangbiang noodles are built from hand slapped Shaanxi wheat dough, pulled into broad ribbons with a resilient chew. Hot oil wakes chili, garlic, scallion, and aged vinegar at the table, coating each fold with heat, acidity, and toasted wheat depth. In Xi'an, the craft is judged by width, bounce, and clean seasoning.
